For those who have some spare cash, the two excursions that I would suggest are the Seaplane that will take you on a scenic flight around the islands and drop you off in Malta for the day. Be prepared to jostle for a window seat so that you can see the spectacular coast line. The plane flies fairly low so you can see a lot of detail.
The next excursion is to hire a boat for the day. We paid the extra and had the boat to ourselves which is terrific as the captain will take you where you wish to go, we were provided with coffee as well as afternoon tea and cooked fresh lunch of fish that has been caught that morning. We stopped off at a number of bays and swam with the fish. This was a magical experience. The captain told us to leap in the water with our snorkels and then he fed the fish. We had countless fish all swimming around us rather like a huge aquarium.
